They’ll be sharing their journey of launching a franchise, lessons learned, and what it really takes to go from interest to ownership. Born and raised in Huntsville, AL, Toni Griffin received a BS in Arts and an MA in Public and Private Management from Birmingham-Southern College in Birmingham, Alabama. Shortly thereafter, she pursued a career in banking while raising three children. Later, she launched her own real estate company in Alabama and Georgia and continued selling real estate in Mississippi and Arizona. Jasmine A. Eldridge is an experienced operations and customer service professional with a strong background in sales, human resources, and marketing. She currently manages daily operations and marketing at The Cookie Plug. Previously, she led retention efforts at AT&T and managed staffing and scheduling at Dynamo Pool Management. Jasmine pursued higher education at Agnes Scott College and brings strong communication, leadership, and tech skills to every role. She has a true passion for people and the path of young entrepreneurship. Opening in August 2025, the new Cookie Plug will be the first location in Hoover, AL. There are strategic plans to open two more locations in the city of Birmingham, as well as locations in Madison and Huntsville, AL.
